I think it is fitting to start with these cookies as it has been a tried and true recipe that we have made for over 20 years. My sister Sally, who is an excellent cook and baker, shared this recipe from her mother-in-law, Marty. Any recipe from Marty is a keeper as I have never tried any of her recipes that I didn't love. I have made these cookies so many times, not only for holidays but any time we need a peanut buttery treat. How can anything with Reese's peanut butter cups be bad? Here is the recipe.
Peanut Butter Temptations
Ingredients:
1/2 cup butter
1/2 cup peanut butter
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 and 1/4 cup flour
3/4 teaspoon baking soda
40 peanut butter cups
Preheat oven to 375 degrees
Cream together, butter, sugar and peanut butter. Beat in egg and vanilla until combined. Sift in flour and baking soda. Refrigerate dough until chilled, can be overnight. Shape dough into 1 inch balls (make 40 balls). Place in un-greased small muffin tins. Bake 8-10 minutes ( I usually take out at 10). Do not over- bake.
Unwrap peanut butter cups while dough is baking. Press one peanut butter cup in each muffin tin until only the tops show. When making for the holidays, add Christmas sprinkles to tops. Let set a few minutes and then remove from muffin tin using a sharp knife. Cool completely on wire racks. Once cool, put in air tight container (or gallon size Ziplocs) and freeze until Christmas!
